Wine may seem counterintuitive with pad Thai. Most people probably choose beer, which is a fine combination. But this dish goes well with many aromatic whites, particularly those that are moderately sweet, like a German spätlese riesling. Even better would be a well-aged auslese, which is potentially sweeter than spätlese (unless aged for at least 10 years, at which point the sweetness begins to mellow).
